Chorizo and Sweet Potato Mash, easy #fitfuel

This is a great, versatile recipe that can be used as a side or as an easy lunch. The sweet and spicy elements make for a nice flavor profile. Also, it's amazing as a post-workout fuel! What you need- 4 sweet potatoes, peeled and diced 2 tablespoons of unsalted butter 1lb of Mexican chorizo, casings removed ½ of a medium white onion, finely diced 4 cloves of garlic, minced ½ teaspoon of kosher salt ¼ teaspoon of freshly-ground black pepper ¼ teaspoon of smoked paprika Ok, so- In a medium pan, saute your onions until they are translucent. Then add the garlic and chorizo, sauteing it all together until lightly browned. Now, put this in the slow cooker with the sweet potatoes, salt, pepper, and paprika. Set the cooker to high for 3 hours and 30 minutes (depending on environmental factors, it may take 4 hours or as little as 3 hours, so keep an eye on it). Ham & Swiss Quiche, for happiness

An omelet has eggs folded over stuff. A frittata has stuff folded into the eggs. A quiche is basically a frittata with a pie crust. So, I mean, you should make a quiche.     What ya need:  1/2 cup of finely chopped yellow onion 1 egg 2 egg whites 1/2 cup  of fat-free sour cream 6 ounces of diced lean ham 6 ounces of shredded low-fat Swiss cheese 1 ready-made 9-inch pie crust Ok, so: Set your oven rack to 1/3 off the bottom. Preheat your oven to 350ºF. In a microwave safe bowl, microwave the onions for 1 minute on high. Discard any fluids that may have come out of the onions and set the onions aside. Grease a pie pan with cooking spray and fit the pie crust to it. In a large bowl, beat the egg, egg whites, and sour cream together. Now stir in the onions ham and cheese. Pour the egg mixture in to the pie crust and place it in the oven. Bake for 40-50 minutes, or until the eggs are firm and the top of the quiche has lightly browned. Serve while hot!

Crock Pot Moo Shu Pork

Ok, so most people look at a crock-pot, or "slow cooker," with really simple, unimaginative glares. Well, let's stop doing that, ok? I dare you to try this out. It's a tasty Moo Shu Pork recipe that benefits from the ease of a crock-pot. What ya need: 1 1/2 pounds of boneless pork loin, cut into thin strips 16 ounces of quality hoisin sauce 3 tablespoons of quality soy sauce 4 scallions, finely chopped 2, 16 ounce bags of cole slaw mix 10 flour tortillas 1 tablespoon of freshly ground black pepper 1 teaspoon of coarse sea salt Ok, so: In a large bowl, toss the pork with the salt and pepper. Add this to your crock-pot (you'll need a 5qt cooker, at least) with the hoisin sauce and soy sauce. Stir this all together. Set the crock-pot to "high", cover, and cook for 90 minutes. At the end of 90 minutes, add 1/2 of the scallions, and the cole slaw mix and stir. Cook, covered, for another 90 minutes. When that's done, transfer to a large dis...
