BBQ Sauce, for happiness

Barbeque sauce is tasty. Why not make your own? It's not really that difficult and it goes with everything. I came across this sauce when I was traveling through Alabama. It's delicious and has Cherry Coke in it, so it's definitely something awesome, haha. What ya need: 1 tablespoon of vegetable oil 2 cups of finely chopped onions 2 garlic cloves,  minced 24 ounces of chili sauce 12 ounces of cherry preserves or jam 1 cup of Cherry Coke (regular, not diet) 1/3 cup of golden brown sugar 1/4 cup of fine balsamic vinegar 1 teaspoon (at least) of hot pepper sauce Ok, so: Grab a large, heavy saucepan and heat it over medium heat. Add the onions and saute until translucent. Add the garlic and saute for another minute. Stir in the chili sauce, Cherry Coke, brown sugar, and vinegar. Bring this all to a simmer and reduce the heat to low. Reduce this down to about 4 cups, stirring often enough to prevent burning or scorching. Add the hot sauce and stir in completely. A...

Honey-Chili Butter, because it's so tasty

Image
This is a personal favorite condiment of mine. I rarely ever make it, only because I consume it almost immediately after making it. So, give it a shot and let me know what you think! What ya need: 1 stick of unsalted butter, at room temp 5 teaspoons of honey 1 teaspoon of chili powder (cayenne works) salt, to taste Ok, so - Whip all of the ingredients together until it forms a smooth mixture. Chill this in the fridge for a minimum of one hour. Spread this on toast, fry an egg in it, put it on a sandwich, eat it by the spoonful, whatever. Love it!

Avocado sauce, tasty stuff

Avocados are pretty great.  In an attempt to put them on everything, a friend asked me to find a recipe for a simple avocado sauce. Since I'm a good friend, and all, I happily obliged. I also had the recipe tested for tastiness in my test kitchen. Yeah, I have one of those. Jealous? I would be. What ya need: 1 ripe avocado, seeded and gutted 1/3 cup of fresh cilantro 2 cloves of garlic, peeled Sea salt, to taste Black pepper, to taste 1 tablespoon of olive oil 1/2 tablespoon of red wine vinegar Juice of 1 lime Ok, so: Ready? Ok. Put all of the ingredients in a blender or a food processor and blend until smooth. Add more salt and pepper, to your liking. Oh hey, you're done.  Treat yourself to a cookie.

Bacon Butter, for your inner glutton.

I was at brunch today with my brother Amit and two of his friends. One of which, let's call her S, is a pretty big foodie. In turn, our conversation was rather food-centric throughout the meal. Since it was brunch, bacon made its way onto the table. That got me thinking about bacon and bacon-based recipes. Now I don't think bacon goes well with EVERYTHING. But, if you want a great way to put bacon on almost anything, make this bacon butter. It's easy and it's really quite good. What ya need: 1 stick (1/4 lb) unsalted butter, softened to room temperature 1/2 cup crisp bacon, finely crushed or crumbled (Serrano ham works as well) 1/4 Tbsp kosher salt (If you're using a specialty salt such as Himalayan, use a little less) 1/2 Tbsp freshly ground white pepper Ok, so: Grab a big bowl and throw in the butter and bacon. Mix these together until well-blended. Now throw in the salt and pepper, a little at a time, mixing as you go. Taste the butter between adding more salt an...
