Mustard-Glazed Turkey Cutlets - Guest Post!!!

new dinner recipe with you all today!
The dinners I make ordinarily
revolve around a protein dish, paired with some kind of vegetable. Unless I’m
planning on a long run the next day, veggies are the only carbs I serve. Not to
say that grain carbohydrates are bad. In fact, they show up in my breakfast and
lunches quite frequently. This is just a diet that I typically follow, because
it works for me! Today’s recipe is for turkey cutlets, along with a side of
seasoned steamed broccoli. It’s by far
the best turkey cutlet recipe I’ve ever tasted.
Ingredients:
- 4 turkey cutlets, tenderized
- 2 tablespoons horseradish
- 2 tablespoons spicy brown mustard
- 1 tablespoon brown sugar
- 1 cup black beans
- ½ teaspoon garlic salt
- ½ teaspoon cayenne pepper
- ¼ cup Feta crumbles
- Chicken broth
- 1 tablespoon butter
- Salt and pepper
- All purpose seasoning
Preparation (4 servings)
Turkey Cutlets
- Preheat oven to 300 degrees.
- To make glaze, mix horse radish and spicy brown mustard. Spoon or brush over top of cutlets. Lightly cover in black pepper, and then sprinkle brown sugar on cutlets.
- Bake for 15 minutes.
- Turn on broil for 5-10 minutes until golden brown.
Black Bean Puree
- In a blender or magic bullet, puree black beans, adding chicken broth to desired consistency.
- Pour into a sauce pan, and heat on low. Add garlic salt, cayenne, and salt and pepper to taste. Once warmed, add Feta crumble and melt slightly.
Broccoli Side
- Steam broccoli until just tender.
- Add black pepper and an all purpose seasoning to taste. (I use this Salt-Free Savory All Purpose seasoning by McCormick.)
- Melt in butter, and serve with grated Parmesan cheese.
We frequently make turkey
cutlets, and I can honestly say, this is my favorite recipe. The cutlets have
that spiciness of horseradish, and the black bean puree is a great pair for it.
This broccoli dish is simple, but
that’s what I like about it. Butter adds great flavor, and isn’t terrible for
you when you use it sparingly.
